Some new dietary challanages at our house this week. I was diagnosed with Gestational Diabetes last week. Baby Bee is making her mark, which pushes me to wonder what sort of girl she’s going to be.
Monday
Creamy Chicken and Dumpling soup I’ll use half the bisquick though to make a lower carb, more GD diet friendly option and we’ll serve with a green salad
Tuesday Sesame Chicken with Broccoli, brown rice and egg rolls.
WednesdayPenne with Asparagus Pesto, chicken breasts and green salad
ThursdayRoasted Veggies and Sausage in the crock pot
with homemade beer bread
FridayPizza night! (The quality of said pizza will depend on when/if my Dad comes into town.
Saturday Flat Iron steaks, roasted potatoes and asparagus (this could also be swapped with Friday)
SundayEaster! Baked ham, potatoes au gratin, asparagus (Hey, it’s spring! Make with the asparagus) and some sort of lovely dessert that I’ll decide on later this week.
