Menu Plan Monday-2011 Week 3

This time of year always feels like the doldrums for me.  Even though I love winter, the stretch between New Years and the Princess’s birthday feels like it takes forever.    There’s so little to look forward to and the weather is usually cold enough that it’s hard to play outside and you start to weigh how much you need to run the errand with how much work it is to dress every in layers to run it.

This week, we’re focusing on quick and easy comfort food to help cast off the doldrums.

From last week, I have to say that the Greek Chicken and potatoes just weren’t very good at all.  They weren’t rancid or anything, but the chicken didn’t have a lot of flavor and was dry and after increasing the cooking time by about a million hours to cook the potatoes, they were still hard.


Zucchini Rice Casserole

I’ve made this several times since discovering it when I was pregnant with Baby Bee.  What do I love about it 1) it’s really hearty 2) it’s super flavorful 3) it’s crammed full of veggies so you don’t have to be guilty about serving it all alone.  Note: it takes a long time to cook.  An hour and forty minutes from bell to bell, but it’s worth the time.


Lightened weenie winks and sweet potato fries

(Roll one fat free turkey hot dog up in a reduced fat crescent roll with half a slice of reduced fat American cheese)


Macaroni and cheese with smoked sausage (carry over form last week) and carrots


Chicken pot Pie-you all know by now that this is a serious favorite.


Make your own pizzas


Apple fritters, bacon and eggs

    I’m so impressed when I see meal plans put together, I sometimes get one made, but most times I don’t. This list looks wonderful and tasty, thanks for sharing!! :)

      If I don’t menu plan, our spending gets nuts. I hate it, but I don’t like that judgmental thing Big Daddy does when the grocery bills get out of control. ;)

    How do you get away with breakfast for dinner? I LOVE breakfast for dinner. I (when the kids were at home and playing sports) used to make a monthly menu. That way all the sporting events were on it and I could plan each meal based on the time I had available. I kept it in a binder with my recipes and a list of ideas. Thank you for the renewal of my interest in doing so again!

      We eat brinner because I cook brinner. LOL! If no one likes what I cook, they’re free to plan, shop and cook instead. Interestingly enough, no one is that put off by my choices. At least, not put off enough to put in the effort themselves. ;)
