Menu Plan Monday-2011 Week 5

Can you believe it’s almost February?  I’m sort of glad January is almost over.    I always end up in the doldrums a little bit in January.  Christmas is over and it’s dark so early and it’s really REALLY cold.

Last week, we made Alton Brown’s Cuban Sandwiches.  They were REALLY easy and sooo good.  We don’t have a pannini maker or a sandwich press.  I made the sandwiches in my cast iron skillet and used a round cake pan that I pressed down onto the sandwhich.  They were delicious!  I’d make them again in a minute.

We still have chicken left.  Try not to be surprised.
