Menu Plan Monday-2011 Week 8

Happy Monday!

Last week, I stumbled upon a really neat budget calculator thingie from CNBC.  You input your monthly take home pay and it tells you how much you should be spending on each of seven different categories.   If you’re having budget issues, you can look for where your spending is out of whack in relation to the  model and try to adjust.

Our food budget?  NOT the recommended 14% folks.  It comes in at 25% of our take home pay.  This just isn’t acceptable!  At ALL!  So, I need to work a little harder and working sales and stocking up on on good priced items to get our food cost down.

Did you try the Garlic Cheddar Chicken I posted last week?  If not, you SHOULD.  It’s soooo good.

Monday

Sour Cream Enchiladas with fiesta salad (a carry over form a few weeks ago)

Tuesday

Garlic cheddar chicken thighs with Briami. Yeah, I know.  We ate it last week, but it’s so good I’d eat it for dinner every single day!

Wednesday

Oopah Feta Chicken Breasts , sauteed green beans

Thursday

Artichoke Chicken with veggies and broccoli cheese casserole

Friday

I’m thinking we’re due for a long overdue Family Movie Night!

Saturday

Grilled chicken breasts, grilled veggies, foil potatoes

Sunday

Guinness Beef Stew

    You could try adding pork to your menus. Much cheaper than chicken, and just as good. I know yo have a lot more peeps to feed than I do, but cooking in bulk helps too (i.e. lasagne is generaly a two-fer kind of meal). But I’m sure you know all this.

      I can be very meh about pork. I’m not sure why. I don’t mind it sometimes, but most of the time it really falls short for me.
