Gnocchi and Summer Veggies -(AND the menu plan)
You saw this little recipe gem on here last week. It was a fast AND delicious summer. You all know that i LOVE serving dishes that incorporate loads of vegetables (it’s so easy to get your needed servings that way). My kids are veggie eaters (well, the two little ones) so getting them to eat their veggie sides isn’t a problem, but I’m not much of a fan. I try to be a good example and eat my veggies, but I like it a lot better if I can get two or three servings inside of a yummy recipe.
You could really adapt this to any vegetables you liked, if you aren’t a fan of squash and tomatoes. The flavors are simple, so it would work with nearly anything. If you’re planted a garden, it won’t be long before you’ll need to find recipes for your fresh produce, so I reccomend this one. With garlic bread. Delicious!

Monday–Baby Bee got a family zoo membership for her birthday, so we’ll be out having a family day of fun.
Tuesday-Big Daddy will be slow smoking some ribs using the Chicago style rub that we love so much. I’ll be serving BLT Macaroni Salad and spinach salad
Wednesday-Lemon Rosemary Chicken Bake with salad (we have lots of spinach and lettuce coming up in our garden)
Friday-Lemon Garlic Spaghetti, Grilled chicken breasts and more salad (finding a theme?)
Saturday Zoo trip with the little girls, the princess is staying with Grandma
Sunday-Grilled chicken breasts (with Montreal Chicken seasoning! Delish!), corn and watermelon.
