My Favorite Quick Summer Dinner AND Menu Plan

I’m sure you find, like we do, that summer evenings and weekends just end up busy. There’s so much activity to pack into the nice weather and sometimes it means scrambling at dinner time. This is one of our favorite , super quick summer meals. You can have it on the table and ready to eat in less than 30 minutes.

We buy the pre-seasoned small pork tenderloins and Big Daddy cuts them into medallions.  They take just minutes on the grill.  I, on the other hand, love this process for grilling corn.  The corn can be fully cooked using that method before your water would be even be boiling, if you were looking to boil the corn for dinner.  Lastly, we pair it with a crash hot potato, however, I don’t boil those either.  I microwave the potatoes (I have a potato setting on my microwave.  If I’m making five potatoes, I select it for three, meaning the potatoes are soft enough to smash, but not too over done).  While the potatoes are baking, we grill the corn and pork and it really REALLY is a 30 minute meal.  And it’s delicious, which is great too.


I asked the family for some help planning the menu this week.  Sometimes it gets super tedious and I don’t want to think about it too much.

Monday BLT’s, watermelon and corn on the cob (The Princess’s pick)

Tuesday Chicken meatballs (from Costco.  Have you had them?  Delicious), homemade mac and cheese and veggies (Littlebit’s Pick)

Wednesday Smoked chicken (this is the general brine we use), crash hot potatoes and asparagus (Chosen for Baby Bee)

ThursdaySalsa Chicken in the crock pot, rice and creamy corn

Friday-Undecided.  Maybe out.

Saturday-Smoked hamburgers, watermelon,  corn on the cob
