Chicken Pot Pie Cupcakes

There’s something charming about cupcakes.  There’s something magical about tiny food sized just right for small hands.  I wanted something we could keep in the fridge or freezer to microwave for the girls for lunch time and stumbled upon this great (and super simple) recipe for Chicken Pot Pie Cupcakes at Quick Dish by Tablespoon.

Chicken Pot Pie Cupcakes

Ingredients

  • 2-poached chicken breasts, diced
  • 2 cups of frozen mixed vegetables
  • 2-14oz cans of  cream of chicken and herb soup
  • 3 cans of grands biscuits (8 biscuits per can)
  • shredded cheese (optional)
  1. Preheat oven to 400 degrees
  2. Heat a large skillet over medium heat and dump in frozen veggies (I dumped mine in frozen).  Add diced chicken breast and stir.  Once veggies begin to soften, stir in both cans of soup and cook until heated through
  3. Coat a muffin tin with cooking spray and press a biscuit into each can*.  Add 1/4 cup of chicken on top of the biscuit and top with shredded cheese (if you want)
  4. The original recipe said to bake for 15 but to begin checking the pies at 12 minutes.   However, I found mine needed 18 minutes.

*I wanted to talk a minute about serving size.  The original recipe calls for one biscuit per muffin tin and they make the huge, puffy concoction you saw at the beginning of this post, but since Littlebit and Baby Bee are, well, littler I opted to 1/2 the biscuits for some pies to make them smaller.  You know what works best for your kiddos.

I loaded these into foil pans and froze half.  They can be reheated in the microwave for about a minute and are kid tested, mom approved.  I mean, look at all the veggies you’re sneaking into school lunch!

 

This is another “possibilities are endless” recipes and I love recipes like that.  I’m envisioning a few pans of these with leftover Thanksgiving turkey and they’d work just as well with leftover roast beef .  I’d like this in my post-thanksgiving dinner lunch a lot more than a turkey sandwich, wouldn’t you?

    This is great. Tried them today but used regular biscuits… GREAT!!! We will make again!
