Menu Plan Monday 2011-Week 20

It was probably obvious from last week’s menu plan that we were out of town over the weekend and if I haven’t mentioned that May was going to be a very busy month for us, let me mention it now.  We’re BUSY. Exceedingly.  And after a rather whirlwind trip to Chicago for the wedding of a dear, dear friend (Congratulations!!)we’re home with another packed full weekend.

In addition to all of that, it has now occurred to me, that the Princess only has 11 more days of school and I’m not sure I’m ready for the summer, yet.  The weather’s not sure either, because I’m pretty sure it’s only 40 degrees here this morning, which is just not right.  I’m trying to think spring in my menu planning, but it’s pretty much stew weather.

Pressed Cubano sammies with sweet potato fries

Spicy Honey Brushed Chicken Thighs with roasted potatoes and a green salad

We’ll have company?  Maybe. But I’m not cooking anyhow

Spiedini of Chicken and Zucchini with Almond Salsa Verde, crusty bread with olive oil and salad

What’s For Dinner-Week of July 19th

We don’t have so much summer bounty going on here. My homemade topsy turveys are growing but the plants look a little stunted so I’m not sure they’ll ever produce. We’ll see. The only thing I’m growing with any success is lavender and weeds.

Saturday-The Princess goes to stay with my Dad and his girlfriend for a week, so we’ll meet them for dinner halfway between here and there.

We’re going to try making refrigerator pickles this week. My grandparents always had jars of these little beauties in their refrigerators during the summer time. I found this recipe on cookinglight.com and it seems pretty simple and sounds pretty good and makes me think of childhood summers. Because I love Big Daddy I might try the dilled green beans too. Thinking about trying Angry Chicken’s suggestion for iced too.
