Menu Plan Monday

We’re starting another week.  Littlebit attends preschool one day this week and then next week will settle into her two days a week schedule.  I’ve been struggling lately with exhaustion (ugh) and with the length of my to-do list.  Littlebit has been struggling with naps and things just feel a wee bit crazy.

Thankfully, we’re eating (mostly) out of the freezer this week.

Monday

Macaroni and cheese, chicken nuggets and cucumbers

Tuesday

Chicken brushetta casserole, garlic bread and salad

Wednesday

Taco spaghetti and corn

Thursday

BBQ pork sammies, sweet potato fries and corn

Friday

Pizza and a movie night

Saturday

Family in town for Littlebit’s birthday party, so we may eat out

Sunday

Littlebit’s birthday!

Next weekend, we will be cooking Once a Month Mom’s September plan with childcare help from my Mother-in-law.  Big Daddy and I are actually looking forward to the process and I’m hoping it will save us money AND time because time always seems like it’s at SUCH a premium.

Menu Plan Monday

Happy Labor Day!  Hope everyone is enjoying the last long weekend of summer.  We’ve been sure to spend as much time outside as we can.  Winter will be here soon.  We’ve finished up some outdoor projects and some indoor projects and just relaxed.  The school year is a busy time.

Monday

Beer marinated drumsticks on the grill, foil potatoes and corn on the cob

Tuesday

Littlebit’s first day of school, Soccer Practice, Parent’s night at the Princess’s school

Stuffed Bell Peppers, salad and garlic bread

Wednesday

Chicken Brushetta Casserole, garlic bread and salad

Thursday

Soccer Practice

Chicken packets with sliced cucumbers and sweet potato fries

Friday

Pizza and a movie night

You can find nearly all of these recipes featured here over the last few weeks.  We’re eating out of the freezer, so no real cooking for me.

What’s for Dinner-Week of July 26

The Princess will be out of town this week. She’s spending time with my Dad in MI. My Dad’s place in Michigan is probably the Princess’s most favorite place in the world.


This is the Princess last October on the Old Mission Peninsula. Not exactly my Dad’s, but still pretty darn good.

Sunday Brats on the grill with corn
Monday Trader Joe’s delicious cheese enchiladas with corn
TuesdayFish Stick Po’ boys and cole slaw
WednesdaySlow cooked chicken djion with rice and sugar snap peas.
ThursdayEasy chicken scallopini with orzo veggie toss (yeah, we had it last week, but I liked it and think I can make it BETTER).

What’s For Dinner-Week of 7/12

The honeymoon is over and it’s time for us to resettle into our normal routines, which includes one of my most detested chores-menu planning. Am I the only one who hates menu planning with the fire of a million suns? I don’t know why, but every time I sit down to do it I end up yelling out that I wish we just didn’t have to eat. It’s so freaking tedious.

Sunday-ribs (boiled in Guinness and barbecued), foil potatoes and corn
Monday-Guinness marinated drumsticks, foil potatoes and corn (yeah, we like the foil potatoes and corn quite a bit and since corn is coming into season, we eat our fill)

Tuesday-Cheese enchiladas and corn (thankfully, we like corn. This is in the freezer from Trader Joe’s and it’s DELISH!)
Wednesday-South of the Border Chicken and Pasta skillet with salad
Thursday-Weeknight Taco Salad
Friday-Dinner Out
Saturday-On the Run, but we do have a get together that I need to make an appetizer for.

Menu Plan Monday

Well, this includes Sunday. We find our week works better if we shop on Sunday. Otherwise, finding the time is difficult and at this point in my pregnancy, I could use the help from Big Daddy and the Princess.

Sunday
Marinated beef tenders on the grill, asparagus and watermelon (yeah, I’m craving watermelon. So what?)

Monday
Chicken Stir Fry with brown rice

Tuesday
Chicken Andouille Casserole and steamed veggies

Wednesday
Swiss Steak with mashed cauliflower (instead of potatoes for lower carb. I may actually try mixing a few potates in to try and change the taste a little)

Thursday
Crock pot pork ribs, au gratin potatoes and watermelon


Friday

Pizza night! (WOOT!)

Saturday
Open ended.
