Menu Plan Monday-2011, Week 1

Good Monday Morning!

Everyone here goes back to day.  Back to work, back to school.  I’ll start pulling down the Christmas decorations.  December is, sadly, officially over.   And, so is December’s vast gluttony.  I can’t even count how many calories we must have consumed and I’m NOT going to tell you how much weight I’ve gained.  Suffice to say, I go back to Weight Watchers on Wednesday and I actually cannot wait.

I know that we’re not the only family who is looking to get back to our healthier eating habits of last year.  I’m not sure if I can actually look at another pound of butter or block of cream cheese without feeling slightly queasy.  The menu plan this week is light and healthy.

In addition, Big Daddy are working hard this year to save more and spend less and that means our monstrous grocery bills have to pare down too.  I’ll also be trying to shop grocery sales to get the most bang for our dinner buck.

This week, our local small chain grocery store has an AMAZING deal on frozen boneless, skinless chicken breasts.  How amazing?  1.60 a pound.

Turkey enchilada pie with corn

Chicken Cacciatore

Since blueberries are on sale around here this week, I’ll also be making a few blueberry breakfast goodies including Blueberry Sour Cream Coffee Cake, Lemon Blueberry Bundt Cake and blueberry muffins.

What’s for Dinner-Week of July 26

The Princess will be out of town this week. She’s spending time with my Dad in MI. My Dad’s place in Michigan is probably the Princess’s most favorite place in the world.


This is the Princess last October on the Old Mission Peninsula. Not exactly my Dad’s, but still pretty darn good.
